Meanwhile, slice the eggplants into thick sticks, about 8 cm (3″) long.
Mix the starch with half of the spices and the breadcrumbs with the other half. Roll each eggplant stick first in the starch, then in the flaxseed, and finally in the breadcrumbs.
Arrange the breaded eggplant sticks in the air fryer basket.
Bake them at 180°C (355°F) for 15 minutes until crusty and golden.
