These crusty and golden eggplant fries are simply irresistible, perfect with a dipping sauce.
We baked them in the air fryer for a low-fat and healthy alternative to deep-fried ones, ready in less than 30 minutes.
Soak flaxseeds with water in a bowl for 10 minutes.
Meanwhile, slice the eggplants into thick sticks, about 8 cm (3″) long.
Mix the starch with half of the spices and the breadcrumbs with the other half. Roll each eggplant stick first in the starch, then in the flaxseed, and finally in the breadcrumbs.
