We made a tasty combo of chicory, avocado and spinach, all topped with chia blueberry dressing.
The unique red colour of chicory is due to its high concentration of antioxidants.
Add chicory leaves, avocado wedges, drained lentils and spinach leaves to a bowl.

Blitz half of the blueberries with lime juice and chia seeds.
Pour the dressing over the salad, add chopped walnuts and the remaining blueberries. Season with salt and pepper and toss well.
