Wholemeal flour, soy yogurt, orange juice, and dark chocolate come together into a delicious, low-sugar, vegan brioche.
In a bowl, whisk 15g (0.5 oz) of flour with the yeast and 30ml (1 fl oz) of warm milk. Then, leave the mix to bubble for 5 minutes.
Meanwhile, combine the remaining plain flour with wholemeal flour, starch, and salt in another bowl.
Next, add orange juice, oil, yogurt, lukewarm milk, and the yeast mixture.
Now, add the chocolate chips and knead the mixture for 5 minutes using a mixer with dough hooks.

Then, leave it to prove in a warm place for 50 minutes or until doubled in volume.
Divide the proved dough into 16 pieces. For each piece, pull and tuck the sides of the dough underneath to form a tight, smooth ball.
Then, transfer the buns into a greased baking dish and wrap it in cling film. Allow proving for 30 minutes or until doubled in volume.

Finally, bake the buns for 25 minutes at 180°C (355°F).
