Sweet and chewy, these candied coconut treats are inspired by the classic Jamaican coconut "drops".
They're a lovely tropical dessert made with shredded fresh coconut caramelised with maple syrup and spiced with ginger and nutmeg.
Bake shredded coconut for 10 minutes at 150°C (300°F).

Mix maple syrup, nutmeg, ginger, and coconut in a pot. Bring the syrup to a boil and simmer it for 5 minutes until all the water has reduced.
For each "drop", quickly scoop a spoonful of candied coconut and place it onto a sheet of baking paper. Then, let it cool down and harden before serving it.
