They're chewy and chocolaty, with a bittersweet green tea flavour.
Soak flaxseeds in water for 5 minutes until you have a gel-like mixture. Meanwhile, blitz or mash the avocado into a paste.
In a bowl, combine the oats, baking powder, matcha, a pinch of salt, avocado, "flax-egg", and maple. Work all into a compact dough.
Add the chocolate chips to the cookie dough.

Bake the cookies for 12 minutes at 200°C (390°F) and leave them to crisp up onto a wire rack before serving.
