Moroccan Cauliflower Rice with Chickpeas

STEP 1

Cut the cauliflower into florets, pat them dry, and crumble them into rice-like shreds using a cheese grater.

STEP 2

In a frying pan, heat the olive oil and cook the cauliflower, chickpeas, and kale for 8 minutes until tender.

STEP 3

Sautee the rice with the dressing ingredients, namely cumin, paprika, cayenne pepper, allspice, ginger, cinnamon, black pepper, zest and juice of the lemon, and apple cider vinegar.

STEP 4

Serve the cauliflower rice with soaked and drained Goji berries and raisins, chopped pistachio nuts, and fresh coriander. Enjoy!
