Easy to make and delicious, this bubble tea pairs refreshing passion fruit with energising green tea.
Topped with a dash of maple syrup and coconut milk, it's tasty and healthy too.
Steep the tea in boiling water for 5 minutes and then let it cool down completely.

Add the tapioca pearls to a pot of boiling water. When they float, cover the pot, and cook for 3 minutes.
Then, turn off the heat and keep them in for 3 more minutes.
Drain the balls and let them cool down in a bowl of cold water. Then, drain them again and mix with maple syrup.
Strain the pulp of the passion fruits through a fine-mesh sieve, collecting the juice into a bowl.
To serve, divide the pearls among tall glasses. Then, pour in passion fruit juice and green tea.
Pour in the milk, stir well, and serve with ice cubes.
