Step 1

Steep the tea in boiling water for 5 minutes and then let it cool down completely.

Add the tapioca pearls to a pot of boiling water. When they float, cover the pot, and cook for 3 minutes.

Then, turn off the heat and keep them in for 3 more minutes.

Drain the balls and let them cool down in a bowl of cold water. Then, drain them again and mix with maple syrup.

Strain the pulp of the passion fruits through a fine-mesh sieve, collecting the juice into a bowl.
