Soak the buckwheat in hot water for 30 min, then rinse well. Meanwhile, soak the dates in another bowl of boiling water for 10 minutes.
Then, drain them and blend them into a paste using a food processor.
Now, combine oat flakes, buckwheat, pumpkin seeds, sunflower seeds, chopped hazelnuts, and cacao nibs in a bowl.
Next, add the oil, date paste, and work the mixture into a sticky, coarse dough.

Now, add chopped apricots, toss the granola to break down any big clusters, and bake it for 8 more minutes.
