Wash and clean the strawberries and cut them into chunks.
Put the strawberries in a deep saucepan and add water and freshly squeezed lemon juice.

Cook for 15 more minutes. Dissolve the starch in cold water and add it in. Whisk well and when the jam starts to thicken, remove the pan from the heat and stir vigorously for a minute.
Pour the jam into a sterilised tight-seal jar and keep it upside down for 2 minutes before storing it away.
