Wash and clean the strawberries and cut them into chunks.

Put the strawberries in a deep saucepan and add water and freshly squeezed lemon juice.

Bring the mixture to the boil and simmer for 15 minutes.
For a smoother jam, mash the strawberries with a hand blender.

Cook for 15 more minutes. Dissolve the starch in cold water and add it in. Whisk well and when the jam starts to thicken, remove the pan from the heat and stir vigorously for a minute.
