How to make Vegan Avocado Cookies

Step 1

Soak the chia seeds in water for 10 minutes or until dense and jelly-like. Meanwhile, toast pumpkin seeds and chopped hazelnuts in a skillet or the oven until fragrant.

Step 2Part 1

Blitz half of the oats into flour in a food processor and add it to bowl with the remaining oats, baking powder, erythritol, and a pinch of salt.

Step 2Part 2

Then, add the chia-egg, mashed avocado, toasted nuts, pumpkin seeds, matcha, and Goji berries, and work into a cookie dough.

Step 3

For each cookie, pinch off a handful of dough, roll it, and flatten it down on a baking tray.

Step 4

Bake for 11 minutes at 200°C (390°F) and leave the cookies to cool down on wire rack before serving.
