Soak the chia seeds in water for 10 minutes or until dense and jelly-like. Meanwhile, toast pumpkin seeds and chopped hazelnuts in a skillet or the oven until fragrant.
Blitz half of the oats into flour in a food processor and add it to bowl with the remaining oats, baking powder, erythritol, and a pinch of salt.
Then, add the chia-egg, mashed avocado, toasted nuts, pumpkin seeds, matcha, and Goji berries, and work into a cookie dough.
