Blitz the chickpeas with 30ml (1 fl oz) water and oil. Then, mix them with oat flour, garlic, onion, sage, thyme, and salt in a bowl.

Divide the dough into four pieces and shape them into oval patties, about 1 cm (1/2 inch) thick.
Combine flaxseeds with the remaining water in a bowl. Then, coat each patty first with starch and then with the flax mix.
Finally, press it over the breadcrumbs until completely coated.
Bake the "chicken" for 15 minutes at 220°C (430°F) until crispy.
Meanwhile, mix the tomato sauce with chopped basil and a pinch of salt in a bowl.
Now, top the patties with tomato sauce, nutritional yeast, and vegan mozzarella slices.
Finally, bake them for 10 more minutes until the cheese has melted. Serve them warm with spaghetti or a side salad.
