We swapped the classic buttermilk with a combo of soy yogurt and lemon, and we added raisins for a sweet finish.
In a bowl, whisk yogurt with milk and lemon juice and leave the mixture to sit for 10 minutes.
Meanwhile, mix the flour with oats, baking soda, and salt in another bowl.
Then, add maple, raisins and the prepared buttermilk. Briefly work all into a soft dough, transfer it onto a floured worktop, and shape it into a loaf.
Score a cross in the centre of the bread and bake it for 40 min at 200°C (390°F).
