Transfer the minced mushrooms into a bowl and tip in parsley, chillies, and lime zest. Then, add the chia egg, rice flour, and one tablespoon of oil.

Work the mixture into a dough and then shape the meatballs. Transfer them onto a baking tray and brush them with the remaining oil.

Finally, bake the meatballs at 200°C (390°F) for 25 minutes or until lightly browned and crispy.
