Blitz chopped bananas, coconut milk, and lemon juice in a blender until smooth.

Then, transfer the mixture into a freezer-safe container and freeze the ice cream for 5 hours.
Meanwhile, soak the pitted dates in a cup of warm water for 30 minutes.
Drain them and blitz them with salt and water until smooth.
Now, take the ice cream out of the freezer, stir it well to break down the ice crystals, freeze it for 4 more hours.
Stir the ice once more and then freeze it for 4 more hours.
Now, let the ice cream soften at room temperature. Then, use a skewer to make deep horizontal grooves and fill them with the caramel.
Use the skewer to make caramel swirls in the ice cream. Enjoy it right away as a soft serve or freeze it for 4 hours.
