Chop the watermelon into small cubes or triangles, thinly slice the cucumbers and onions, and cut the peach into wedges.
Heat a griddle pan and sear the peaches for 3 minutes on each side over high heat until tender and charred.
Finally, toss the fruit and vegs in a bowl with salt, pepper, lemon juice, and olive oil.
