How did we make these avocado waffles vegan? We skipped butter, eggs, and milk and used ripe mashed avocados and coconut milk instead.

Step 1

In a bowl, mix sifted self-raising flour with sugar, baking soda, and salt.

If you like, you can swap sugar with erythritol sweetener for a sugar-free option.

In a food processor, blend the avocado with lemon juice, coconut milk, oat/soy milk, vanilla extract, and cinnamon.

Then, incorporate the avocado mix into the flour a bit at time using a hand mixer until you have a smooth, creamy and scoopable waffle batter.

Step 3

Heat your waffle maker to medium-high (not max) and spray/grease the top and bottom griddles with vegetable oil.

Ladle in enough avocado waffle batter to just cover the griddle surface and level it with a spatula (1).

Don't add too much batter or the waffles won't raise well and they'll be dense and gummy instead.

Close the machine lid and cook the avocado waffles for 12-15 minutes or according to the manufacturer's instructions.

Just make sure the waffles are golden brown and cooked through, spongy inside and crusty outside (2).

Step 4

Repeat step 3 until you have used all the batter, keeping the prepared waffles warm in a low oven.
