Well, not anymore. Today, we show you how to make a 100% sugar-free sorbet made with avocado and matcha. And yes, avocado is a fruit; so we are not breaking the sorbet code.
The only ingredients in our sorbet are avocado, matcha powder, lime juice, and sugar-free sweetener erythritol. Our matcha avocado sorbet is keto because it has little to no carbs, and has lots of healthy fats. These are the two pillar elements of a ketogenic diet.
If you like the energising effect of coffee, then you will love matcha here. Matcha's caffeine is better than coffee's, as it induces a state a calm-alertness without causing stress. Moreover, matcha is a rich source of antioxidants that help fight free radicals which can damage our cells and lead to diseases.

How can I turn this matcha sorbet into a green tea ice cream?
The main difference between ice cream and sorbet is that ice cream uses dairy or creamy products, while sorbet uses just fruit. Therefore, sorbets are not as creamy.
But because we used avocado in this recipe, and avocado is quite creamy, this sorbet is not that different from ice cream.

What else can I add to this matcha sorbet?
For this recipe, we have used avocados and matcha tea powder, but you can surely boost this dessert with other tasty ingredients.
For example, try adding frozen berries like blueberries, strawberries, raspberries or blackberries for extra goodness.
Also, dark chocolate chips pair wonderfully with this avocado ice cream. For best results, keep the chocolate chunks in the fridge and add them to green sorbet mixture before place it in the freezer.
Another great option is to add cacao powder to the ingredients, blitz all together, and you'll have a mouthwatering chocolate ice cream.
What can I use instead of erythritol?
To make this recipe sugar-free and suitable for people on a low-carb diet, like the ketogenic diet, we have used zero-calorie erythritol. This natural sweetener tastes almost as sweet as white sugar, but it doesn't raise blood sugars levels as it actually doesn't get digested.
As an alternative to this sweetener, you can use stevia or monk fruit. If, instead, you're not following a special diet, you can also use raw honey or maple syrup. To prepare the ice cream, use them in the same amount and in the same way as erythritol.
Ingredients
Lime Juice | 70 mL |
Erythritol | 150 g |
Avocado | 5 |
Matcha Powder | 1 tsp |
Mint Leaves (optional) | 2 |
Step 1
Add lime juice to a saucepan along with the erythritol. Heat the mixture without letting it boil and keep stirring until the erythritol granules are completely dissolved.
Then, leave the syrup to cool down a few minutes.
Step 2
In a food processor, blitz the avocados with the prepared syrup and matcha green tea powder. You can also add the mint leaves now if are using them.
Pulse the ingredients to a smooth, soft cream.
Step 3
Transfer the green ice cream to a freezer-friendly container.
Freeze for six to eight hours stirring the sorbet every couple of hours to break down the ice crystals.
Once ready, leave it to thaw for a few minutes before scooping.
Tips
You can use a glass or plastic container or even a loaf tin to store the matcha sorbet. If you don't have a lid, wrap the container in cling film to avoid any spillage.
