What if your next breakfast could look and taste like a gorgeous, mouthwatering dessert? Well, dream no more. This cherry parfait with chocolate muesli is a cute, creative, and yet healthy breakfast idea.
This yoghurt pot recipe is so easy and quick to prepare you'll want to make it every day. All you have to do is puree the cherries, mix the muesli ingredients, and layer them with soy yoghurt in your nicest glass. Job done!
Combining muesli with fruit and yoghurt means you'll have a balanced and nutritious meal to fuel your morning.
Oats, flaxseeds, pumpkin seeds, and almond butter are a powerhouse of fibres, proteins, and slow-digesting carbs. They will keep you full for longer, curb cravings and prevent that mid-morning energy crash.
We added a few chunks of dark chocolate chips to the muesli blend for a boost of antioxidants and mood-lifting compounds.
Chocolate and cherry pair together wonderfully — we already used this combo in our delicious cherry smoothie with cocoa!
Just make sure to use dark chocolate with at least 80% cocoa solids to keep the sugars low and enjoy all its benefits without guilt.
Cherries are also rich in antioxidants, especially anthocyanins, a class of plant pigments that give this fruit its unique deep red colour.
You can use either fresh or frozen cherries, so you won't have to worry about not finding them when they aren't in season.
To make this breakfast parfait vegan, we used plain, unsweetened soy yoghurt. If you can't eat soy, we have an easy recipe for homemade oat milk yoghurt if you'd like to try something new!
A generous serving of this parfait has only 280 calories and covers 9% of your RDI for carbs, 25% RDI for proteins, and 25% RDI for fibres. Sweet!
Ingredients
Cherries (fresh or frozen) | 160 g |
Soy Yogurt | 200 g |
Acai Berry Powder (optional) | 1 tsp |
Jumbo Rolled Oats | 40 g |
Ground Flaxseeds | 8 g |
Pumpkin Seeds | 10 g |
Nut Butter (Almond or Peanut) | 10 g |
Dark Chocolate 90% | 10 g |
Step 1
In a food processor, add 50 g of yoghurt, pitted cherries, acai berry powder, and blitz until smooth.
Step 2
Then, combine the oat flakes with ground flaxseeds, pumpkin seeds, nut butter and dark chocolate chunks in a bowl.
Step 3
Finally, let's assemble the parfait.
Put a layer of chocolate muesli in the base of a serving glass. Spoon over the soy yogurt and then cover with the cherry purée (1).
Repeat this layering pattern one more time and then garnish with the remaining muesli (2).
Tips
You can swap soy yoghurt with coconut or oat yoghurt or even Greek yoghurt, if not vegan.
